Gordon Ramsey’s show, The Ultimate Cookery Course on Amazon Prime, has been my inspiration for dinner lately. I’ve been in a cooking rut, not really knowing how to mix it up with my dinner meals. And watching him cook in his own kitchen as been the inspirational boost I’ve needed. He really breaks down the simplicity of cooking, seasoning, and how to navigate a kitchen to be the most successful and confident.
Last night, I didn’t feel like cooking. I was again feeling uninspired and needing to “think” of something to make. You know that “think” where you’re in the kitchen, asking yourself how the heck dinner came around again so fast? Yeah, that “think”. So I sat down and decided to watch one of his episodes (like you do when it’s time to cook) and found the inspiration to whip up something super simple. Long story short, I came up with my own version of tuna melts -and they were delicious!
Without further adieu, here is the recipe.
Tuna Melt Open Face:
Prep Time: 15 Minutes Cook Time: 5 Minutes
Ingredients:
-2 dinner rolls, cut in half
-2 slices deli cheese of choice (I used muenster)
-11 oz. packet of tuna in water
-1 cup shredded carrots
-1 large handful of spinach leaves, chopped
-1/2-3/4 cup mayo (we use avocado oil mayo, and measure based on how creamy you like it)
-2 tbsp. mustard
-1 tbsp. olive oil
-2 garlic cloves, diced
-1 lemon, sliced in half
-Salt
-Pepper
Directions:
1) Heat small frying pan to get nice and hot. When hot, add olive oil and when it starts smoking, add garlic cloves. Cook until fragrant and browned.
2) While saut?ing the garlic, in small bowl mix together mayo, mustard, salt to taste and pepper to taste. Squeeze juice from both lemon halves into mixture and whisk up. When garlic is done, mix that in and stir it up to make a nice, creamy consistency.
3) In a large bowl, add tuna, carrots, and spinach. Pour mayo mixture on top and mix well.
4) Cut 2 large dinner rolls in half and remove inside of bread. Butter edges of bread and sprinkle with garlic powder and oregano if desired. Brown off on cast iron skillet for 2 minutes, inside of bun down.
5) Flip bread over and remove from skillet. Fill each half with tuna mixture and top with half a slice of cheese. Put back on cast iron skillet and broil for 2 minutes 30 seconds.
6) Serve warm with a side of tomato and avocado!
Note: if you want to change up the veggies in the mixture, you can use kale, onions, zucchini, tomato, or whatever sounds delicious to you! This is a very versatile recipe, so make it your own.
