One of my favorite ways to keep up with the success of my health and fitness is to meal prep. And one of the EASIEST things to meal prep is salad jars because there is little cooking involved and you can do a lot in a very short amount of time. I make them often, but this time I decided to take my salad jar prepping to the next level and make them a ready-made 21 Day Fix and 21 Day Fix Extreme meal.
If you have never meal prepped salad jars before, I will walk through how easy they are to make and how absolutely scrumptious they can be. I will also give a breakdown of the container equivalents so you can plan with your 21 Day Fix or Extreme accordingly!
I start the salad jars with pouring the dressing on the bottom. It’s one orange container with 1 tbsp. of olive oil and 1 tbsp. of balsamic vinegar. Then I add chopped purple onion, about 1/4 of a green containers worth. When sitting in the dressing, the onion adds a wonderful flavor!
The next thing I add is the protein. I use free range, nitrate free
ground turkey that is cooked with the 21 Day Fix Southwestern Seasoning
Mix. I use 1 red container in each jar. I swear the flavors from the dressing and onions transfer up to the meat and make it absolutely delicious!
Next, I add half a green container of diced mini bell pepper. I LOVE the flavor of bell pepper and the fact that it is high in vitamin C and beta carotene. You can de-seed them, but I don’t because the seed texture doesn’t bother me. But I know for many it does, so it’s totally up to you!
Would you just LOOK at that color forming in the jars?! Goodness I love the color of vegetables (and fruits too!)! Getting sidetracked here… the next layer in my salad jars is 1/2 green container of tomatoes. My go-to tomato is the roma, but you can use beefsteak, cherry, plum, or your tomato of choice.
Lastly, I stuff the top of the salad jars with spinach and romaine lettuce leaves, which is an equivalent to about 1 green container. You can use whatever kind of lettuce you want, but I prefer using a combination of these two. I also get asked a lot how many days these stay good for (especially the lettuce). If you are in
fact using mason jars, I have had them last up to 5 days tasting like
they do on day 1.
Keep in mind, in order to keep the salads fresh and the soft foods such as tomato and lettuce from getting mushy or wilted you must layer them in an order similar to the one I’m using here. The dressing should ALWAYS go on the bottom and the lettuce ALWAYS on top. Otherwise, it will be a huge, salad jar fail.
When it’s time for you to eat your yummy salad, I always dump mine into a bowl. But if you have enough room you can shake it up in the jar and just eat! You also have the option to use a blue container on the salad when you’re devouring it. I like to add avocado, but any kind of 21 Day Fix approved cheese would be delicious too!
I didn’t have enough of my quart-sized mason jars at my disposal at the time of prepping these, so these 2 pint-sized mason jars I prepped with everything minus the lettuce. When I eat them, I can make a meal out of what is already in the jar or put 1 green container of greens in a bowl and then simply add the jar of food on top and Voila! A super delicious and super fast salad is born!
